Need a good recipe for Lent? That’s cool because I got a good one (I stole this recipe from mom)! I don’t personally follow the rules of Lent but know a lot of people that do. Its simple, its easy and you probably have most of these things in your kitchen already. Oh, and its yummy!
Ingredients:
6 oz of tomato sauce or crushed tomatoes
2 cans of tuna in water (drained)
2 tbsp of spanish olives + tsp of olive water
olive oil
1 tbsp of sofrito (found in the freezer aisle)
salt and pepper
1 tsp of adobo
Heat some olive oil (1 turn of the pan).
Add a tablespoon of sofrito to the oil and let it cook for 1 – 2 minutes.
Add your olives and splash of olive water to the pan.
Then flake drained tuna into the pan to break it up into pieces. Stir to incorporate sofrito and olives into tuna, about 2 minutes.
Add your tomato sauce and dry seasonings. Stir.
Allow to simmer on low for 20 minutes.
Serve with White Rice.

Oh I love this! As a Jew, I don’t really observe Lent but my husband and I eat TONS of tuna. I can’t get sofrito ready made here in the middle of nowhere, but I’ll let you know how this works with homemade sofrito.

You lie! I don’t have sofrito! I have no idea what it is actually:-( I’m guessing I could probably find it in one of the bigger grocery stores in my area, or maybe the Brazilian market in town? (wild guess)
