Here, pictured above is my very last bagel from Starbucks. I have fallen into a rut in the kitchen department and running to the ‘bucks for a morning bagel has turned into an addiction. They’re bagels are so yummy but there’s really nothing nutritious about 5 servings of bread with 2 tablespoons of sweet cheese. I get hungry after like 3 hrs… and its really not worth it- when I can have something much more for way less calories! so *tear* farewell Starbucks bagel!
And plus, carrying my morning coffee in my purse (made by my fabulous new coffee machine) has stopped my daily trips… if I could only stop visiting the hot chocolate machine at 3….

Well, like i said before i was in a rut so i didn’t plan very well for my lunch. I discovered a yummy falafel pita at the deli near my job for less than $6! its fresh and delicious every time. So I had one of them falafel thingys and a ginger ale

and some kettle chips. Boy am I out of control! I need to pull in the reigns ASAP and get my booty into gear!
I was looking forward to the evening because I was getting fresh groceries delivered (fresh Direct) and had added mussels to my order for a yummy… quick… and EASY dinner. Get ready y’all…. its a recipe!
MY MUSSELS:
Ingredients
2 lbs of mussels
1 jar of your favorite marinara sauce or homemade sauce (about 28-32 oz)
2 cloves of garlic
1 tsp of red pepper flakes
pasta (optional)
I started by examining the mussels. I ordered 2 lbs but by the time i was done checking them all i was down to about 1.25 lbs which is still a lot for me and Henry to eat. Make sure that you chuck the open mussels and remove the “beards”; those are little gross strings that hang out near the hinge. And scrub them down because the shells will be in your sauce.
If you got time, you might want to make your own sauce. But a really good jarred sauce can do the job! I added red pepper flakes to make it “fra diavlo” or Spicy.
In an attempt to try something new, I ordered fresh linguine. i didn’t like it that much….
Okay, get yourself a sauce pot, large enough to throw the mussels in. Heat a little oil in the pot and grate 2 cloves of garlic into the mix. Toss in the mussels. Cover them. Let them get hot for 5 minutes. When they start to open add the sauce and red pepper flakes. . Give it a stir and cover it again. Let it cook for 5-7 minutes or until the mussels have opened up.
What i love most about this is while the mussels are cooking, the sauce is doing its thing to the mussels so they come out – so EFFING yummy.
Henry was pleasantly surprised that i not only saved a trip out to dinner but I COOKED and it was SOOO Good. Since we didn’t love the pasta, we just ate the mussels. The sauce was great and the spice really made the sauce more homemade.
