I succeeded in my menu planning! The only thing that sucks is that I will be eating several of my meals for DAYS. But at least im saving money and at least I can FREEZE Stuff!
I perused every single cookbook i had when coming up with my menus. I got some pretty decent stuff cooked up too! I needed one more menu to complete my week and i had considered a quesadilla and to make it super easy I purchased an already cooked rotisserie chicken. With the chicken in my hand I had a thought: POT PIE! I would only need a few more items to complete this recipe… so here it goes.
1 refrigerated pie crust, 1 rotisserie chicken roughly chopped (remove bones and skin of course), 1 10 oz pkg of frozen mixed veggies, 1 can of cream of potato and 1 beaten egg. And salt and pepper.
If you buy your pie crust you will notice it comes with two! sweet! if you like you can use one and make a topping for your pot pie but im using both of mine. Start by adding the mixed veggies to the pie crust.
throw as much roughly chopped chicken into the pie… though I only used the breast meat since my pie was overflowing. Combine your egg and cream of potato and smear on top of your chicken and veggies. It is a good time to add salt and pepper if you need it…
next flip the 2nd pie crust on top of the pie and using a fork smash the ends togehter. YOu could get fancy with it by cutting the top layer into strips and creating a lattice pie top… but who has time for that! lol. Bake it according to the directions on the pie. 400* for 20-30 mins or until golden brown.
yuuuuum! let it sit for a while before you dig into it so the insides can somewhat solidify.
i couldnt wait and ended up with soupy pot pie, but it was sooo good.


OMG, I love chicken pot pie! I always use the second crust for the top too … but mine never looks as pretty as yours does with the fork marks. LOL I like to add green peppers, peas and green beans to my pot pie. And, if I have some extra roasted sweet potatoes lying around, I'll throw those in too. Sweet potatoes and chicken are such a good combo.
I love pot pie! But I've never made it before. This method looks delicious and relatively easy. I need to try it!
My mom used to try to cook me pot pie as a child and I would cry every time! I always made chicken nuggets or cereal instead! I haven't tried it since but yours looks yummy!

With all the Thanksgiving leftovers, they make terrific pot pies! Leftover turkey, veg, potato, etc. All you need is the cream and pie crust. Oooh la la.
I haven't made a homemade pot pie in a while. I love them & yours looks delish! I like to make one with chili and a cornbread crust in the winter time.
i can't deny that goat cheese & balsamic would some how many a serious appearance in my pot pie. in the best pot pie of my life i would have mint chocolate chip ice cream and rainbow cookies galore hahaha but let's not go overboard here julie

I think the texture and mixture of foods just doesnt do it for me, BUT witht hat said, I give you MAJOR props for throwing that together because it looks so professional!!my pot pie would be filled with ice cream and oreos!!
I need to menu plan in a baaaaad way. I have been off the entire month with vacationing, moving, etc but I am going to get on it soon.I've never had the pot pie before, I had a bad experience when I used to work at Cracker Barrel and always got complaint they were frozen in the middle, eek. But yours looks awesome!!
Growing up I despised pot pies. My mom bought the cheapest ones she could find and I thought they tasted like cardboard…however, I am an adult now and realize that this dish can be a great comfort food with exquisite flavor! Actually I stopped by your site because the name grabbed my attention. My husband calls me a "food snob"! Great site!
