Yesterday, I posted my Chocolate Merengue project. If you remember correctly, the Merengues were born due to an excess of egg whites. The excess of egg whites is a result of the Tiramisu I made.
Why did I make Tiramisu?
Well, at my office, many of the staff usually stick around for about a year before they move on to greener pastures for the exception of one person… Lets call him C Daddy. C Daddy has been working with me for the past 4 years; and sadly, he will be leaving me in April. We happen to share a birthday week. And as you know I like to make things for people on their birthdays. Especially people like C Daddy.
Lately, C Daddy has been picking on me at work; which can only mean one thing: Homeboy is gonna miss Mo Diva and the others. Last year, C Daddy, thinking he could stump me, requested a cheesecake for his birthday. Not just a cheesecake…. a freakin Cherry Cheesecake. I ate up his challenge and he ate up the cheesecake. This year, thinking he could challenge me said “Diva, I want Tiramisu”. Oh and he was so fancy when he said it.
Okay he might have stumped me a tiny bit… With so many recipes and techniques, it was hard to pick one solid recipe. Luckily, i just HAPPEN to be on Joanne’s blog and found a really great recipe. I have had the pleasure of sharing a dance floor with Joanne… and judging by her amazing dance skills I was positive her recipe would be just as amazing.![]()
Irish Cream Tiramisu (recipe inspired by Joanne @ joanneeatswellwithothers)
Ing:
5 egg yolks
1/4 cup sugar
1 lb of marscapone cheese
2 tbsp Baileys Irish Creme
1 cup Toffee Nut or Hazelnut Coffee
2 boxes of lady fingers
1/2 cup cocoa powder
Cream egg yolks and sugar on low speed in your mixer; about 1 or 2 minutes. Don’t over beat.
I decided to attach the flat beater to gently mix in the marscapone cheese![]()
I decided to add the Baileys to the marscapone mixture… but i thought it loosened up the cheese mixture too much… might add the baileys to the coffee next time.
Scrape down the bowl and chill in the fridge while you prep the next step.
In your cup of coffee, dip the lady fingers briefly and lay in a single layer in your desired pan.
I made sure to cover every single square inch of the pan…
Add half of the cheese mixture thats hanging out in the fridge and sprinkle generously with cocoa powder. Repeat procedure with lady fingers. Add
add remaining marscapone mixture and sprinkle with cocoa powder or chopped chocolate.
Cover and refrigerate at least 2 hrs before you consume.
I was in heaven with all the lovely textures and flavors. Granted, its been a while since i have made tiramisu and I went off the recipe quite a bit, it was a nice project.
C Daddy was surprised and very pleased with his birthday tiramisu. I insist that you make this recipe at home! There is no baking required! and it is sure to impress even the most annoying coworkers on their birthday!

I died laughing while reading this. You should never bake anything of mine based on my dance skills. Ever. Mostly because they are non-existent. But I love you. And I'm so glad you loved this. <3
The tiramisu looked perfect! I love Bailey's especially in coffee! Yum.
Ok maybe I am dumb but I never knew it was that easy to make! I definitely need to give this a go now.
