Just a few more days left of the year. Hope you had a great holiday. I sure as hell could use a do over. I am definitely going to take advantage of New Years Eve only because this Christmas wasnt what I was hoping for…
I had the flu.
and a sinus infection…
and bronchitis.
Which means I was pretty freakin miserable over christmas. I hear Im not the only one that got sick this year but it really sucks when everyone you love is celebrating and being merry, and you’re stuck. in bed. and absolutely miserable. No christmas ham. No homemade bread. No dessert. No seeing the look on everyones face when they open their present.
I am blessed though. I am well again. And i had so many offers from friends and family to spend the holidays with them.
but look out 2011… im making up for lost time!

Behold! the Red Velvet Swirl Brownies! I promised when i made the Marble Brownies that I would give these babies another go when i re-upped my red food coloring…. so here they are.
Sonny Anderson’s Red Velvet Swirl Brownies
Ing: 1 stick butter (softened), 1 cup sugar, 1 tsp vanilla, 1/4 cup cocoa powder, 1 tbsp red food coloring, 1 tsp white vinegar, 2 eggs, 3/4 cup AP flour.
I combined all the ingredients in my mixer and poured them into a nonstick brownie pan (8×8 or 5 x 11). I then prepared the cream cheese frosting. (save 2 tbsp of the batter for the swirl)
8oz cream cheese, 1/4 cup sugar, 1 egg, 1 tsp vanilla, whipped in the mixer.
Preheat the oven t0 350*.
Pour the cream cheese layer onto the top layer of red velvet brownies.
drop small portions of the batter on top of the cream cheese layer.
Using a toothpick or sharp knife, swirl the batter with the cream cheese to make a nice design.
Bake for 20-30 minutes or until center no longer jiggles.
Allow to cool. slice up. and serve.
These freeze really well! I will say that i liked the chocolate cream cheese brownies better… but these were still excellent. And different.

My Christmas kinda sucked too, family drama, meh. I am going to a friends place for NYE and Linx is coming too so I can't wait to get my drink on while eating and watching bad movies then passing out–woo hoo!
YUCK to being sick! I hope you're feeling better love! I am on red velvet overload since I made a red velvet cheesecake for xmas. But there's always room for more. These look amazing!
