I came out of my baking sabbatical!!
Sort of …
Way before my wisdom teeth were extracted, I scored a bag of dairy, nut and soy free chocolate chunks from Enjoy Life Foods. I kept making a note to get to it and there has been sooo much going on that I left the chips in their tasty glory just anxiously waiting for me to do something! anything!
Truth be told, prior to this project, i needed a chocolate fix and I needed it ASAP (dont act like its just me!) and I tore into the bag for a handful of these babies. They were awesome. At first i was planning on baking a loaf of sweet bread (not to be confused with sweetbreads) with these chunky babies but thought they needed to be the star of a cookie.
And who doesn’t love cookies loaded with CHUNKS of gooey chocolate???

I used my favorite chocolate chip cookie recipe! And just substituted the chunks of chocolate instead of itty bitty chips.
My dough this time around was so fluffy and velvetty. There is a good chance that I tasted a few too many tablespoons of raw cookie dough… but it was sooo good.
I baked a measly 12 cookies because:
-I couldnt have so many cookies around
-I couldnt stay in the kitchen baking because it was hot
-it was 11pm
-i wanted to freeze the dough for future cookie cravings
I wrapped up the remaining dough and made note to bake sometime in the frigid weather… or sooner- whatever.
After about 8 minutes, these beauts came out of the oven. I had one (duh) and shared some with the roommate. I packed the rest up for the boy who had an interesting breakfast on the road. But they were soft so im guessing it was like pocket muffin cookies???
My shoddy camera did a horrible job capturing the goo factor of the chunks in the cookie.
It made a wonderful dessert. As I sit here eating a bowl of mush….i dream of those cookies that wait to be baked in my freezer.

I am absolutely obsessed with Enjoy Life Chocolate Chunks. They are so good and definitely make some fabulous cookies. I have never thought of freezing dough before. Maybe I will have to give it a try!xo
Mmmmm I'm sitting here holding my tummy because I'm so hungry. I love how big the chips are! Are you feeling back to normal yet?? It's funny how everyone is different, when I had my wisdom teeth pulled I was expecting to be in a world of hurt but was ok after a day.
