Merry Christmas Eve Ya’ll!
As my contribution to my officemates for this holiday, I decided to make my very delicious and waistline friendly pumpkin bread.
Its very simple and all you need is the following:

1 box of yellow cake mix
1 15 oz can of pure pumpkin
1 tbsp of pumpkin pie spice
1 tbsp maple syrup
1 egg white
1 tsp cinnamon


use a nonstick brownie pan. Preheat oven to 325. (if using glass bakeware, preheat to 350)
Dump can of pumpkin into a big mixing bowl.


add syrup, egg white, and spices.


Using an electric mixer, mix in a little of the cake mix at a time. The consistency should be semi- doughy and velvety.

Once all the cake mix is fully incorporated into the pureed pumpkin pour into the brownie pan and level out. Bake for 35 – 45 mins or until toothpick comes out clean.
