I picked up a lovey steak recipe from my mother over the years. Its an easy dinner but it takes time and i have renamed it the “Will you marry me” steak. It has become my secret weapon in getting what I want from the men I have dated in the past. Its Cheap to make and when you take a bite you will tell the cook You want to marry them. So far, it has happened 2 times. I haven’t made this for Henry yet… but I will let you know how that goes.
Start off with some Chuck Steak. Its the cheapest cut of steak and because you are slow cooking this in your oven, it comes out juicy, tender and doesn’t need a knife. Trust me. I was even more lucky to get this piece as a managers special. This huge hunk of meat for $2.75 is a STEAL and I cooked it the day I bought it (cleaned it first!). This piece is about 1.79 lbs.

Next step, Preheat the oven to 325*. Season the CRAP out of this meat. I used Onion Powder, garlic Powder, Sea Salt, and Pepper on both sides.

And add a cap-full of vinegar onto the meat. Vinegar is a GREAT meat tenderizer. I usually use my nice champagne vinegar but I ran out… and this was on hand. No biggie.

Place the meat in a baking pan and add about one whole cup of water. Like my lil teacup? I dont drink out of it. I use it to add water to my dishes.

The water should be a little higher than this. Almost the same level as the meat. As the steak cooks, the bits of fat (it trimmed a lot of it off- but not all of it) cook with the water and make a really good base for a sauce – i will get to that later.

Cover with foil and cook for 2.5 to 3 hrs. Depending on how much meat you are cooking. I cooked mine for 3 hrs and 5 minutes. It shrinks down a bit and all that lovely brown water will make a delicious sauce if you put it on the stove top with a little flour and whisk it up. Great on mashed potatoes! the steak will come apart when you stick your fork in it.
I usually add a whole chopped onion on top of this but I ran out! 😦 the onions caramelize beautifully in this dish.

For 30 minutes I broiled some broccoli and a potato sprinkled with salt and pepper.

Steak with roasted potatoes and broccoli. Can life get ANY better than that?

Maybe, but this is pretty damn good.
