With spring right around the corner, i have been taking advantage of the warmer temperatures in the city around lunch time. Usually, I take a walk, pick up a cup of coffee, walk back to work and eat my lunch.

I took a detour and decided to go to Billy’s Bakery for a coffee.

…and a cupcake for Patty. Cuz she’s the best.

As i was getting my coffee card punched, someone came out of the back area with a ginormous and freshly made Peanut Butter pie.

I couldn’t stop staring at it.

“Okay, so a small coffee and a chocolate frosted cupcake. Anything else?”

::silence::

“Ma’am?”

Ugh, don’t call me ma’am! Can i get a slice of that heaven?

“Sure. For here? or to go?”

And because it was a gorgeous day and the sun was shining in the bakery, i decided right then and there that lunch would be a slice of pie in a sun drenched bakery parlour with a fresh cup of coffee.

Since the pie was just made, it was a bit difficult to slice… and i ended up with this peanut buttery mess.

but oh, what a delicious mess. I could barely eat half of this. Its rich. and Delicious. I gladly took the other half back to work to share the calories with some of my dearests. What i didn’t expect was to create a peanut butter pie obsession amongst my coworkers… and to have that same pie the very next day for lunch with my office wife, Karen.

I am definitely not the type to go and have dessert for lunch. I like to keep things balanced (like one beer in each hand kind of balanced) and after having such a RICH lunch, I wanted something healthy for dinner.

Healthy and quick.

I found a can of black beans in the cabinet and took a stab at some black bean Burgers.

Black Bean Burgers(makes 4 burgers)

Ing:

1 can of black beans (rinsed and drained)

1 small onion (diced)

1 cup of panko

1 egg

1 tsp garlic powder

2 Tablespoons water

In a medium bowl, smash black beans into a lumpy paste. I found that while doing this with my potato masher it took a really long time- so i used my hands. Squishing the crap out of these beans was oddly satisfying.

Fold in the onions. Followed by the egg, panko, garlic, water and salt. Mix till all ingredients are fully incorporated into the smushed beans. The mixture should be sticky. If its too wet, add a little more panko and if its too dry, add water 1 Tablespoon at a time until its sticky and mushy. Divide into 4 equal servings. Roll each portion into a ball and flatten with you hands into a burger patty.

I pan fried these in extra virgin olive oil 4 minutes on each side over medium heat to form a nice crust on the outside to keep the burgers intact.

Sprinkle with your favorite cheese (cheddar for me) and serve on a bun, or crumbled over a salad, or eat as is. This was my first homemade veggie burger and i am very pleased with the results!

I’m sure they freeze well- but i have intentions of having a burger every day for lunch. 🙂

****At the start of this post All was well in my world. But then around 10:30 am I was escorted out of my office building due to a fire. I spent the rest of the morning standing outside in the cool weather (which later became cold). My office will be closed till the end of the week, my belongings, including my camera and flash-drive are being held hostage in my smoke filled office. I am grateful that no one got hurt but this might be my last post for a while until i can get my things*****

My Gravy, it is such a gorgeous day in NYC. The sun is out! the snow is melting, and the temperature is a comfortable 40 something degrees… I can totally smell spring fighting its way to NY! Spring means one thing… ALLERGIES. I love spring but I hate allergies. Just be warned… if its not snow im complaining about its pollen. 🙂

Speaking of allergies.

I decided that with all my free time and my love for animals that I should volunteer at the nearest animal shelter. Rescuing Mickey has changed my life and it breaks my heart to know there are so many more animals in shelters that are just waiting for someone to take them home… I cant afford another dog but thought if i donated my time I could make a pup a lil happier with a few hours of tlc. So I volunteered with Bobbi and the Strays. Sunday was my first day. I was asked to clean cages. I reported to work, excited and eager to help. My shift was from 10 -2.

At 9:55 I was given a crash course on cleaning cat cages.

“have you ever worked with cats before?”

No.

So they guided me. They showed me how to clean everything and told me i didnt have to handle the kitties if i didnt want to. But I got to work scooping litter boxes, cleaning bedding and crates… and then i noticed that my nose was starting to run. I ignored it. then I started sneezing. I also ignored it. My eyes were tearing up and then the most intense Itch all over the inside of my mouth and throat.

“Monique, are you allergic to cats?”

I dont know.

“Um, i think you’d better go before it gets out of control… we will call you so we can arrange for you to walk the dogs if you still want to help”

SAD PANDA. So now I will be a dog walker with ZERO cat contact. 😦 oh wellz.

Okay, so the other day, my coworker told the office he was moving to China. And on his last day we wanted to wish him well so we took him to lunch for a nice and healthy bon voyage.

Spring Street Natural Restaurant on Spring Street in SoHo. The place is very veggie friendly and reasonable price wise… there is also a very busy bunch around lunch time so its best to call ahead and make reservations.

We were seated and brought a basket of warm bread. This beauty was semi sweet… my mouth thinks its a sweet potato bread of sorts…but i could be wrong. I might have had two slices of bread with butter… but i cant remember.

The menu had so many wonderful things to choose from and after hearing my friend RAVE about their veggie burgers, I decided to go with it. The portions are wonderful and I made a deal with my friend next to me that will allow him to eat most of my fries…and seriously what MAN would turn down free fries with garlic mayo?
And this veggie burger was not DEEP FRIED. might have been pan fried but it did not have a lot of oil so maybe it was grilled with panko bread crumbs? dunno.

the base of the burger had sweet potatoes and was served on a fresh whole wheat bun… it was heavenly… and yes I put the garlic mayo on this baby! DEELISH!
I am so going back to Spring Street Naturals… They have so many other items on their menu that i would love to try; including free range chicken sandwiches, grass fed beef steaks… and lots more. Cant wait to go back!

I am soooo happy its Friday!
Momma Food Snob is having minor surgery today. My goal is to spend the weekend in Brooklyn helping mommy. She is gonna be off her feet for a few weeks so i best be beefin up the content on the blog so momma-dukes has something awesome to read (cuz, i am so friggin awesome). I’m most looking forward to taking care of her. She’s my bestie! When my father had surgery a while back, I took delight in taking care of him too. I will never forget the look on his face when i made him smiley face pancakes on the first day I was taking care of him.
Just wanted to tell the world that I have amazing and supportive parents who have been there for me when i really needed them and even when I dont think i need them, they are still there!

I still have a horrendous cough. Some days it gets better and some days it sounds like im a smoker hacking up my lungs. ))))smokers(((( But I figured my dairy consumption wasn’t helping the situation so i recently switched to soy and tried to eliminate dairy from my diet.
I LOVE vanilla soy milk, i love everything about it so when I went to a different grocery store and saw that the store brand vanilla soy was on sale for $1 per carton, i grabbed two and was so excited. When I got home I learned that you have to be brand loyal when buying soy milk. I added it to my coffee and its disgusting. The vanilla flavor tastes artificial and gives my coffee a nasty aftertaste. So tomorrow, back to trader joes for my TJ brand of vanilla soy.

And because my coffee was so shitty i went for my lemon yogurt. A dairy product. Oh well. It was really good too.

My supervisor came back from vacation with a shit load of flavored seltzers. When I went apeshit over one of them he surprised me with my own bottle. Vanilla seltzer. Its like a cream soda…. but not.

Breakfast was small and disappointing. So around lunch time i ordered some take out. There is an awesome place by my office that serves GREAT portions sizes for lunch. I believe they are 1.5 cup servings and come with an egg roll. I got brown rice with chicken and broccoli. Probably not the bestest choice considering big lunches make me sleeeeeeepy…. and I have been going to bed soo late…. and my coffee was disappointing.
Im on a roll.
Din din was light. And i felt like such a blogger.

And that blogger trend of salsa on the salad. Dude, that ish was goooood.
I have a confession to make: i havent been to the gym in almost 2 weeks. I havent worked out at home in almost 2 weeks and I have been cheating. I promise to jump back on my fitness wagon before I become a typical resolutionist! I have worked really hard in the last two months and no stupid sinus infection is gonna Eff it up for me!

Morning my lovelies.
In a fit of early spring cleaning I decided to setup this blog like if it were a real blog. LOL. So we got our own twitter account! yay! We got our own email Account! yay! and now we have our own domain! yay!!!
What took me so long? Oh, i dont know. Might have been just sheer laziness… moving right along.
After a mammoth bowl of jamba oats, I decided to change up the breakfast a bit. While watching Dr. Oz’s 100th episode, all of his attending guests were all people who have lost 100 pounds! they were providing tips and one of them suggested having a bigger breakfast to keep you full throughout the day.
I know it looks ginormous but its 3 egg whites, 1 veggie burger, a generous pour of chunky and spicy salsa with some toasted sandwich thins. 350 calorie brekkie. not bad, eh? and Suuuuuper filling.

For lunchies my tummy was craving some sushi. Why is sushi so amazingly good? Its got the most amazing textures and flavors combined. I could be stuffed to the gills with food and would have a hard time turning down a salmon avocado roll. Heavenly. This is about 1.5 rolls. Uber filling. And I was satisfied with a full belly of sushi, looking forward to a good dinner!
When i got home from work, i let Mickey out of her room and she ran under the dining table.

“Mickey, lets go for a walk”
usually this causes her to run like a speeding bullet to the door… but she started hiding from me.

“mickey, come”
avoidance means one thing…

“Did you do something bad?”
yes she did. She had an accident. in her bed. the bed that i just washed two days ago.
The joys of being a fur momma.
I took Mickey on a quick walk since her bladder was empty already and came home to make some dinner and re-wash her bed.
Foodbuzz Tastemaker Program sent me Kikkomans new Lime Ponzu sauce. I was so excited when I got this because I am all about the asian flavors! I love love love ponzu sauce. I will note that I normally do not like citrus flavors in savory dishes but i was feeling adventurous…and hungry!

I let 9 shrimp marinate in ponzu, soy sauce, sesame oil, garlic powder, splash of rice vinegar, and red pepper flakes for about 30 minutes.
I grilled some zucchini and boiled some whole wheat pasta while the shrimp were soaking up tasty goodness.

Cooked the shrimp on a screaming hot pan for 2 minutes on each side. shaped like C’s means cooked, shaped like O’s means OVERCOOKED!

when everything was cooked i threw it in the same pan with all the drippings from the shrimp and lightly tossed it to cover it with the yummy sauce. I used 1/2 cup dry pasta, 1 whole zucchini and 9 shrimp (reg serving: 6) for a REALLY REALLY good dinner.
Kind of reminded me of a hearty linguine… the shrimp had a delicious flavor to them and the lime didnt overpower it at all- in fact i barely tasted it!
I am actually marinating some shrimp as we speak for tonights dinner! cant wait.

Normally, I have a yummy bowl of oats or grits for breakfast. I get a lot of weird looks or gas faces at the mention of grits. It isnt the most beautiful sounding word but grits are just the savory version of oats with a coarse grain as opposed to the sweet creamy oatmeal you are most familiar with. For me, a bowl of grits is the equivalent of bacon and eggs… the savory aspect that is, and Im fuller for longer because my craving for the salty stuff was satisfied.
yesterday, i had a chobani in the fridge. a lonely chobani. I took a break from my grits and went for the Chobani.
I love this yogurt. But that full satisfied feeling i get from hot cereal was missing. And an hour later I had to dig into my emergecny stash.

Its the Wal-Mart brand of quakers Chewy Bars. 90 calories of granola and chocolate- yum! Might have been a better idea crumbled into my yogurt… but we all make mistakes. I had packed a very boring lunch and forgot that it was thursday.
Lunch with Dad day.
I was looking forward to lunch with Dad to be able to show myself that I can have control and choose the right thing to eat when dining out. Its challenging sometimes… especially when new foods stir excitment and giddyness!
The original plan was to have Thai… and oh how i love broad noodles with garlic sauce! But they were closed and dad chose the pub right next door where they make the most amazing burgers and fries. ever.
This is going to be tough.
Luckily, the menu looked like it had some semi healthy options.. or should I say lower calorie options. I was stuck between the veggie burger or the cobb salad. When the waitress came over to take my order, the first thing I asked was if the veggie burger was fried. I learned a long time ago (the hard way) that most veggie burgers in diners and small restaurants are deep fried and I didnt want a fried veggie burger!
“No, its not fried at all”
“really? Not even pan fried”
“Nope”
“Great! i will have that with a salad”
Notice how crispy by veggie burger looks?
She lied… or shes an idiot. Seriously. Because I was on my lunch hour I didnt have time to argue or ask for something else. I ate my salad and my veggie burger. Might have been better off with the turkey burger. (even EAT THIS NOT THAT tells you the veggie burger is sometimes the WORST choice! when salad is offered- go for the salad!)
the burger was fried but it was soo damn good.
I am trying not to beat myself up about it.
i went home to try my new Wii Step Riser (which makes a BIG difference on the step games and yoga!) and an hour later had a light dinner to balance out the horror from lunch time.
A big delicious mug of Jasmine Tea in my pretty Holiday Mug (thanks lil bro!)

And cinnamon oatmeal with a spoon of dark chocolate dream peanut butter from Peanut Butter and Company.

A nice stir later and I had a wonderfully filling and deliciously light dinner.
We all have slip ups but the important thing is to get right back on track. Now I know next time I go to that pub… just stick to salad!

Leftover rice. It can go one of two ways with leftover rice with me. It can be left in the fridge till its beyond edible (yeah, sometimes i just forget its in there) or I can make another use for it.
I wasn’t loving the dry texture of this rice so i thought I would make another use for it. While spending yet another day on my couch I was sucked into the “Baby Hour” on TLC. You know the programs… “A Baby Story”, “Bringing home Baby”, etc etc. Yes I watch those shows partially because I am madly in love with babies but also because I love watching how different people approach parenthood.
But the last episode I saw was of this beautiful mixed couple, the guy was asian and I think the girl was hawaiin or phillipine – freakin gorgeous couple… ANYWAY hubs was making wifey breakfast and he whipped up Fried Rice… I was like HUH? And for the mere 5 seconds they showed him cooking i was thinking up brunch.
C’mere leftover rice… I got an idea. I was going to make my Hungry Girls recipe of Veggie Scramble using eggwhites, a little cheese, and a Dr. Praeger Veggie Burger (yum) and remembered that the Dr. Praeger Veggies burgers are CHOCK FULL of chopped up veggies. That would make a perfect crumble to make a veggie fried rice. Heat a pan and add a few drops of roasted sesame seed oil ( man this oil is deliciously fragrant when its heated!) And then throw in 1/2 a cup of rice. While you get the sesame oil lovin on the rice, defrost the veggie burger in the microwave for 20 seconds. After its defrosted, Crumble it over the rice. Give it a few folds to get the sesame flavor on the crumble.

then I add an egg to the party. Eggs in fried rice are kind of like Glue. While the egg is cooking with the rice, be sure to constantly fold the mixture to make sure the eggs are well incorporated into the mix. Add some soy sauce (I added a little bit of onion powder and garlic powder too).

This is after i added a 1/2 tablespoon of soy sauce. You can add more or less according to your taste… but soy sauce gives it a nice color and a generous portion of salt.

It doesnt take too long to make ( about 10 mins or less actually) and it really helped add some moisture to my dry rice. I was a nice portion of rice and with the addition of the veggie burger proved to be a filling dish as well! I washed this down with a cup of coffee… not the greatest combo. Next time i will have my homemade iced tea.
Try this and feel free to add your own touch to it. Maybe some red pepper flakes for a spicy kick! yum!

I need to know why everything is falling apart?
When it rains, it pours?
A number of things when wrong and its not even 11am yet! I left my camera home. I had new things to share with you this morning but am grateful I had a recipe and some pics to share already uploaded. As I was mopping I yelled (expletive deleted) and my lil Mickey was shaking in a corner because before my spillage, she had an accident in her crate… one of many in the past few days.
And lastly I was still slapping my bed and my clothing for dust because the building manager had brick and mortar work done right outside my window (without my knowledge) and I left my AC on so ALL THE DUST was SUCKED into my room and everything is covered in this dust that leaves skin feeling raped of all its moisture and is almost impossible to mop- i have mopped 3 times in the last 12 hrs and there is still a layer of crap on my floor!
So…
I’m having a really great day so far.

Lets hop on the happy blog bus…
Its no secret that Henry and I love to go to the diner for breakfast from time to time… But we are both trying to cut back. Financially and physically. It makes no sense to go to a diner so often and pay $20 for breakfast after a $60 shopping trip having just purchased enough food to make breakfast for a month!
So when Henry did his little stretch saying “village diner?” I said No. I’m making us Breakfast… and Im making a healthier breakfast.
Preheat your oven to 400*. Lets start with some eggs. Im still on my Hungry-Girl Veggie Scramble Kick and I have been dying for Henry to try it. I beat about 2 eggs and 4 eggs whites in a bowl with a tbsp of water to stretch it a bit. I nuked a Dr. Praegers Veggie burger (California style) to get it where I can crumble it. Poured the egg mixture into a hot skillet, scrambled egg style, seasoned it with salt and pepper.Crumble veggie burger into the eggs. and move it all around with your spatula to get everything evenly distributed.

add some cheese…mmm.

It should look like this… and then put it in the oven (pan and everything) for 10-15 minutes.

Using a potholder, grab your pan and give it a gentle shake. If it jiggles it ain’t done yet and let it cook for a few more minutes. It should be solid when it comes out with slightly browned edges.

Slice it up pizza style and serve it up! I had 2.5 slices and a half of a bagel with spray butter. What I love most about Frittata is that visually it looks like a lot and it makes 8 slices. So i felt like a pig eating almost three slices but it was very satisfying.
and Once again i fooled Henry. He was munching away and asked where i got the sausage from.

His face was priceless- he looked a little scared but i told him it was a veggie burger and he was very impressed.

After a semi- satisfying Korean adventure last weekend, I was still feeling my craving for Korean food. So Henry picked me up and took me to our Korean Spot in Jackson Heights Queens. I have been here about 4 times and I never thought to try to find the name of this place… and last night when I did I realized i wouldn’t have remembered anyway! Its written in Korean; Not english-Korean, Straight up – no english whatsoever- Korean. When I find a translation or a way to say it in english I will share… but for now – its just the Korean Place.
And this time, I brought the good camera!


The minute we sat down they brought out the condiments. Henry and I always dig right in because I can’t look at it without eating it. Everything on the table was fantastic! Henry and i ALWAYS fight over the Baked tofu. Since I have learned how to make my own, I dont fight him too much. There were 10 little dishes on our table. Who knows where to start?


I ordered an appetizer. The one thing that I know right off the top of my head: Jap Chae. Glass noodles with scallions, beef, mushrooms, and other veggies. Its one of my favorites. We tore this dish up.
Now, if you remember… last time I ordered Bul Go Ki. I thought the description and name sounded familiar but I had it all wrong. What you see above is Pul Ko Ki. Pul Ko Ki is marinated strips of beef… not marinated ground beef that I mistakenly ordered the last time I had Vietnamese.
It was a great dinner! And super cheap! What I love most is that we got an amazingly tasty cup of tea to go with our meal! I love it! We spent $35 total for the massive feast you are looking at.

This morning I carried a bit of my Maple Ginger Granola from Platte Clove Naturals.

Believe it or not, as good as the other one is… this one is BETTER! Karen, My coworker ordered 3 of the ginger ones yesterday and when she tried them today she was happy she ordered this one. Not that the other tastes bad… this one just tastes better. I still love them both …

But once again proceeded to munch on the entire supply of granola that i brought to work. The good news is that I’m extremely full and satisfied! (thank goodness for that!)


I had my Oikos again today. i took another shot today to demonstrate the thickness of the yogurt and the lovely bit of honey down under the creamy blanket of yogurt.


I topped it off with granola again and just kept adding more and more granola till I couldnt eat anymore! I think tomorrows yogurt will have some Wild Muffin (thanks Sarah for saving me one!) crumbled on top! (stole that idea from Kath)

MMM! Best Brekkie Ever!

For Lunch I am having a veggie burger.

I love the Trader Joe brand because its affordable and is a quality product! This is as close to Indian food as Im gonna get these days so I was looking forward to trying this!

Grilled them up with a little extra Virgin Olive Oil. I let them char on each side (because thats how i like it!)

and added them to two slices of toast, a slice of cheese, and lots of lettuce. A good sammie MUST crunch!

This looks like its gonna be a very yummy lunch! I cant wait!
As a side dish for lunch Im having raw broccoli dipped in Fat free Ranch Dressing. I forgot how yummy raw veggies could be! Like snacking on chips (crunch factor) Minus all the grease and junk.

And for the ride home, I will be munching on these veggie crinkles from Lesser Evil. At first bite I really didnt like these too much but after another try I found them to be very yummy. Almost like a No Salt Cheese Doodle! Kudos for them being baked! I let Karen and Rose try them and they went online and bought the sampler pack! More on the Lesser Evil Stuff Later.
Tonight, I am having Vietnamese… and stay tuned because I am pretty sure i will have a surprise for you all tomorrow!
